A table for two, and always space for more. This windy Tuesday, the boys snuggled up indoors for an early evening picnic treat. But, not just any picnic, of course – but, a teddy bear picnic!
Just like any mama, we all have our days that are non-stop and where we just don’t quite manage to get around to everything. Today was one of those days – with Angela still recovering from a bug, and myself still partly numb from my dentist appointment earlier in the day, we opted for shop bought piggy meringues, and a delicious cup of Nomu Hot Chocolate with marshmallows for an after dinner treat!
But, don’t worry! Of course, we will still provide you with a recipe for the day. It doesn’t take a rocket scientist to make meringues, but it’s still nice to follow an EASY, NO FAIL recipe when you’re in the kitchen with kids who often leave you frantically trying to recall how many cups of sugar you’ve added.
I love meringues, especially the kind with the gooey, chewy center! My mom has always made the most delicious, yet simple meringues – which meant I grew up knowing what a real good one tasted like. I don’t just settle for anything anymore!
So, you’re welcome – here’s the recipe! I have provided you with two versions. First being the plain, but slightly chewy ones, and second being chocolate meringues!
Meringues (slightly chewy)
- 3 egg whites (not a drop of yolk!) Beat stiffly
- Gradually add: 1 cup sugar
Just before you finish adding sugar, add: 1 tsp baking powder, 1 tsp vanilla, 1 tsp vinegar. Beat in the rest of the sugar.
Spoon onto greaseproof paper. Bake 130 C for 1 hour. Leave in oven to cool.
- 1/2 cup egg whites (3 – 4)
- 1 cup white sugar
Beat above until stiff then fold in:
- 2 or 2.5 Tbsp cocoa powder
- 1/4 cup chocolate chips (or cut up a bit of dark chocolate into small bits)
Can bake at 180C for 15 – 20 min but I usually do the 120C or 130C for an hour.
